How To Cook our sausages:
NEVER BOIL!!  before grilling or cooking (THEY WILL DRY UP)
Because our sausages are not excessive in fat content, we recommend these cooking techniques.
Using thawed (fresh) sausages
Grilling –   instead of using high heat, start off with cooking of med heat for 10 – 15 minutes then increase for the last 5- 10.
Oven –     Heat oven at 375 degrees, place sausages in baking dish add small amount of water to dish, enough to cover the bottom.
Bake uncovered for 20- 25 minutes.
Stove Top –  Add small amount of water to skillet, (1/4 inch)  place sausages in skillet and cover, heat on medium to high for approximately 8- 10 min.
This method allows the sausages to steam, not boil. Uncover and let any remaining water and moisture evaporate, continue cooking for approx. 8 – 12 minutes until they will start to turn golden in colour.
A great dish is pepperonata.  Any left over or freshly cooked or par- cooked sausages. (See above method.)

– Chop green, red, yellow or orange pepper (your preference)
(at least 3 – 4 peppers)
– 2-3 chopped zucchini
– 2-3 chopped blanched potatoes
– 2- 3 fresh garlic cloves
– left over or par cooked sausages ( cut in pieces)
– 1 onion chopped (optional)
Heat oven at 350
mix all ingredients in a bowl,  add salt to taste some dry oregano, drizzle some cooking oil lightly coating all ingredients.
place in baking dish, bake at 350 – 375 for approximately 45minutes.  (until veggies soften and browned)  DELICIOUS!!!
a fresh mixed green salad on the side and DINNERS DONE!!!

 Flat chickens

Flat chickens are enjoyed either grilled indirectly on a gas or charcoal bbq. And oven roasted
Indirect gas bbq – light one side of bbq  med to high heat, place flat chicken skin side up on the unlit side.  Shut lid at cook for 20 minutes per lb.  (every chicken various in weight)

Charcoal bbq – scoop charcoal to one side, place flatchicken skin side up, directly on opposite side of grill, (or on drip pan to avoid any flare ups).  If charcoal bbq has lid cover and cook for 20 min per lb.  If there is no lid, loosely cover chicken with foil.

Oven roasted – preheat oven at 350 to 375, place flat chicken in roasting pan (not too sallow to avoid splatter) roast uncovered 20 minutes per lb.
Other roasting suggestions:  Chop potatoes, yams, carrots, parsnips, onion, etc.  Toss with some cooking oil season with salt, dry herbs add to pan with flat chicken add little water or stock.   Yummm!

Kozlik`s Canadian Mustard

Maple Glaze Pork

3 lb boneless pork loin roast, 2 tblsp Kozliks’s Amazing Maple Mustard, 1 tsp maple syrup, 1 tbsp of olive oil
Salt, and cracked pepper to taste, ½ cup white wine, ½ cup of stock
Mix together maple mustard, maple syrup and olive oil, salt and cracked pepper, mix into paste and rub over pork roast.  Place in roasting pan add white wine and stock
Roast at preheated oven at 300 for 1 ½ hours
