All about the Caselli Vinegar Plant.

The cooked “must” is taken from the “Mother Casks” and transferred to the largest barrels in banks formed by barrels made from different types of wood, gradually scaled down in size. Fermentation takes place in these barrels, while the central ones are used for maturing and the smallest for aging.

Traditional Balsamic aged for 7 years,

Organic Balsamic Passion, vinegar aged for 7 years.

Invecchiato balsamic vinegar aged for 12 years.

The Balsamic Passion is formed from the best selected “must” that originates from the Organic Agriculture of the Caselli’s very own vineyards. It flavours notes a bouquet of natural aroma and flavours of trebbiana grapes. This sweet and sour taste results to an ultimate condiment for seafood dishes to delicate dessert!!
