Cooking our Flat Chickens

Flat chickens are enjoyed either grilled indirectly on a gas or charcoal BBQ, or oven roasted.

Indirect gas BBQ: Light one side of the BBQ on medium to high heat, place the flat chicken skin side up on the unlit side. Shut the lid, and cook for approximately 20 minutes per pound (every chicken varies in weight).


Charcoal BBQ: Scoop charcoal to one side of the BBQ and place the flat chicken skin side up on the side opposite to the charcoal. Feel free to place the chicken on a drip pan to avoid any flare ups. If the BBQ has a lid, cover the chicken and cook for approximately 20 minutes per pound. If there is no lid, loosely cover chicken with foil and cook for approximately 20 minutes per pound.

Oven roasted: Preheat oven to 350-375°. Place the flat chicken in a roasting pan that is not too shallow to avoid splatter. Roast the chicken uncovered for 20 minutes per pound.

Suggestions: Add seasonal vegetables of your choice as a side dish. Chop potatoes, yams, carrots, parnsips and onions. Toss the vegetables in a bowl with cooking oil and season with salt and dry herbs of your choice. Add the seasoned vegetables to the pan with the flat chicken and add some water or stock to the pan.
