Icelandic Cod in a Pan


1 to 2 fillets of cod

2 garlic cloves

Fresh ripe chopped tomatoes

Fresh basil or dry

Fresh parsley


Olives of choice pitted and chopped

Splash of white wine or lemon juice

Black pepper

Fresh spinach (optional)

Cooking oil


Add cooking oil of your choice to a pan and sauté garlic on medium heat until lightly golden. Add the chopped tomatoes, basil and parsley to the pan and sprinkle a pinch of seat salt, ground black pepper and cook on medium heat for approximately 10 minutes.

Add the cod fillets and a splash of white win to the pan. Cover the pan and cook cod until tender, approximately 15-20 minutes, until the cod begins to flake. Baste the cod every 5 minutes while cooking.

Reduce heat to low, add capers, olives and a handful of spinach. Close the lid and let simmer for a few minutes until the spinach is cooked.

Drizzle the dish with olive oil, top with fresh chopped basil, and enjoy!
