Sausage Peperonata



Ingredients


1 lb. BBN sausage of your choice

Mini potatoes, cut in half or 2 yellow potatoes cubed

1 yellow and red pepper, julienned

1 large onion, sliced

4 garlic cloves

1 tbsp dry oregano

1/4 cup of olive oil

Black pepper and salt to taste


Directions

Preheat oven at 375°F. Lightly coat a cast iron or frying pan in a cooking oil of your choice and sear thawed sausages until their casings become firm enough to cut into pieces. Ensure the sausages do not cook thoroughly and are only seared.

Cut the seared sausages into 4-5 even pieces (do not worry if the meat crumbles as you cut the sausages!) Add all the prepared vegetables and sausage pieces in a medium bowl. Add the oregano oil, olive oil and a sprinkle of black pepper and mix thoroughly. Add the seasoned vegetables and sausage into a roasting pan.

Bake the vegetables and sausages for 25-35 minutes, mixing half way between cooking time. Enjoy with some toasted bread and a side salad.
